taste of home recipe

Mediterranean chicken orzo
  • 6 boneless skinless chicken thighs
  • 1 cup uncooked orzo
  • 2 cups low sodium chicken broth
  • 8 ounces diced tomatoes
  • juice zest 2 lemons
  • 2 cups pitted black green brine-cured olives sliced
  • 1 large carrot peeled diced
  • 1 small red onion diced
  • 1 tablespoon herbs de Provence
  • 2 tablespoons butter
  • place all ingredients in slow cooker cook for 4 to 6 hours   serves 6
