got a christmas present from taste of home they published
my mighty mango shrimp recipe in their holiday and celebrations cookbook. served hot or cold the shrimp has a nice kick of spice balanced by the sweetness of the mango.. serves 4.
1 1/4 cups mango nectar
2 tablespoons lime juice
4 teaspoons chipolte pepper in adobo sauce minced
1 1/2 teaspoons grated lime peel
1 1/4 teaspoons ground cumin
16 uncooked jumbo shrimp peeled deviened
1. in a large bowl combine first 5 ingredients until blended, reserve 1/2 cup of marinade, add shrimp to remaining marinade toss gently. let stand 15 minutes,
2. drain shrimp discarding marinade. on 4 metal or soaked wooden skewers thread shrimp . brush grill lightly with oil.
3.grill shrimp covered over medium heat or broil 4 inches fr5om heat 3 - 4 minutes on each side or until they turn pink, brushing with reserved marinade
this would be good for new years appetizer.
